We make this wine from a special selection of our plot wines.
Every year, once the regular aging periods have been completed in our underground stone celler, my wife Diana and myself blind-taste every single 3 year-old wine barrel.
From all those barrels we pick just two of them.
These two barrels will be pardoned and allowed to further rest for two more years, completing a total 5 year aging time.
The result will be: 2 x 225lt barrels = Just 600 bottles!!!!
